Check Out These Lower Carb Side Dish Options!

 Low-Carb MakeoversI am always looking for ways to spice up my low-carb meals and when I saw the post "7 Classic Carb-Heavy Dinners—Made Lighter" from the prevention.com I was intrigued. It is defiantly a post to keep in my Jimmy D's Pintrest Cookbook.


Here are my notes:

Low-Carb Cauliflower Pilaf : Loved what they did with it. I think that this could be used as a base for many dishes. I have been experimenting with adding a bit of dehydrated chicken broth to my olive oil to give it a rice taste. I think that I might try that technique with this recipe in the near future. I also thought that the curried shrimp was a nice touch. You could also used a chicken. I love Indian food.

Low-Carb Celery Root–Leek Cakes: Defiantly have to try this. It looks filling. For some reason I think that this would go well with corned beef. I also might be craving corned beef and think just about everything would go well with it. Not sure. Still, these cakes look good.

Low-Carb Carrot Fries: I have never seen this before and it looks awesome! I wonder how crispy they get. Maybe you could add some crisp by using a parmigiana cheese covering? As the picture suggest this would be a great addition to a steak dinner or with Portobello Steaks on Meatless Mondays.
