LOW CARB: More uses for your dehydrated Kale


The other day I figured out how to use a bunch of dehydrated Kale and add more veggies to my diet all at the same time with my curry meatball recipe. I wanted to post a quick update letting people know that I added the Kale/Curry seasoning to my chicken sald and it was AWESOME! I think that my next step is to modify this "The Best Curried Chicken Salad You’ll Ever Eat" recipe from the Art of Doing Stuff blog and see what I can come up with. I'm thinking dried cranberries. Stay tuned!

LOW CARB Kale Meatballs

Its a meat night and I decided to experiment a bit with dinner. A few weeks ago I made some dehydrated kale chips. Really didn't like how they came out but didn't want to throw it away. So I decided to grind it up, added an egg,  some curry and used it as filler for tonight's meatballs. Mmmmmm good!

Low Carb Vegetarian Spanish Rice

Working off my low carb vegetarian chili mac recipe I decided to continue going down the Mexican food path and be creative. This time I expirimented with Tacos and Spanish Rice. I have a great recipie for low carb refried beans (black soy beans) but that one will have to wait till I make my low carb vegitarian Burito Supreme!

Low Carb Vegetarian Chili-Mac

Cold and snowy day here in NC. Nothing like sitting inside and dreaming of warmer days. What a perfect time for comfort food! Specifically, the tried and true American dish Chili-Mac. This craving presents a bit of a challenge for us low-carbers since just about everything in the meal screams carbs. Add to that the concept of trying to keep it vegetarian and it seems like this dish just isn't an option. Determined, I threw on my thinking cap and came up with this delicious recipe!

Some changes ......

Changed the blog up a bit and picked a new domain name. I've decided to take a more lighthearted approach to my postings. I'll slowly get back to all the SEO crap but for now I just want to focus on communicating.  I am also trying to post more via my phone. Keep an eye out for more changes soon.

Today is going to be a light workout day starting with a lunch time walk with my buddy Tony Robbins. Trying to rest my knees for this weekends long run. My last long run was a strong 10 miles, this weekend's goal to is 13+. It also gives me time to wind down and continue listening to Tony's "Living Health" seminar. Tonight is all about To-Shin-Do class.
